Eliana’s Easy Passover Meatballs
Need an easy recipe for Passover?
I make these delicious, addictive meatballs all year round! When it isn’t Passover, I’ll serve them with rice or egg noodles. Makes about 6 dozen.
Ingredients
Group 1:
- 2 eggs, lightly beaten
- 1/2 cup water
- 1/2 cup chopped onion
- 1/2 matzo meal
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 clove of chopped garlic (garlic powder also works)
- 2 lbs ground beef
Group 2:
- 8 oz tomato sauce
- 1 cup sugar
- 1/2 cup lemon juice
- 1/2 cup water
- 1 cup chopped onion
- 1 clove of chopped garlic (optional)
Directions
- In a large bowl, combine the items from Group 1 and mix well. Shape into 1-in. balls and put aside.
- In a Dutch oven, combine the items from Group 2. Add meatballs; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until meat is no longer pink. Serve with a slotted spoon.
NOTE: I like to use the left over sauce as a base for either a stew or chili starter. Get creative 🙂
